Poulet was co-founded in 1979by Marilyn Rinzler and Bruce Aidells.
It began as an alternative take-out eatery. A place where you could take home fresh, healthy, gourmet food, rather than having to cook at home. We have always had a simple philosophy, food is very basic, lets enjoy it. For over 25 years Poulet has remained true to this philosophy and this is why people have been coming for all these years. The food world may have changed since it began, but Poulet's founding ideas have never gone out of fashion.

 

Below is a photo of Poulet before it opened, in 1979, when it took over the space previously occupied by a frozen yogurt store (the rage at the time). Eventually Poulet expanded into the space next door, a "general store" that sold everything from soap to comic books. The owner used to go away a lot, and put up a sign saying "gone fishing" and then would actually go fishing.
